Granny’s Irish Soda Bread

Easy Irish Soda Bread done in a bundt pan to avoid the typical dryness of most Irish Soda Bread. Granny McDonnell did this and it’s so delicious!
Ingredients
  • Stir Together:
  • 4 cups flour
  • 1 cup sugar
  • 4 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 8oz box raisins or more (I use 12 oz box)
  • In blender or mixer, mix:
  • 1 cup milk
  • 1 cup sour cream
  • 2 eggs and white of 3rd egg (save yolk)
Instructions
  1. Pour liquid mixture into dry mixture. Stir well. Spoon into a greased tube pan. Brush beaten egg yolk on top. Bake at 350 degree oven for 1 hour or until toothpick inserted comes out clean.
  2. (Variation: Mini Loaf Pans (8) – Bake 12-15 min at 350 degrees)
