Black Bean Soup

- 2 cans (15.5 oz.) Black Beans, undrained
- 1/3 cup chopped onions
- 1 clove garlic, minced
- 1-2 tablespoon olive oil
- 1 cup water
- 1 chicken bouillon cube (I use No Sodium Chicken Broth)
- ½ cup cooked diced smoked ham (optional)
Instructions
- Sauté onion and garlic in oil in 3-quart heavy saucepan. Puree or mash contents of 1 can of black beans and add to sautéed ingredients. Add the remaining can of black beans, water, bouillon and ham. Bring to a boil, reduce heat and simmer for 30 minutes. A dollop of sour cream on top is a nice addition, with a tsp of shredded cheddar.
- Serves 4-6. To make it thicker, use less water.
