Red Velvet Cake

Ingredients
- 2.5 cups cake flour
- 1.5 cup sugar
- 1.5 cup vegetable oil
- 2 eggs
- 1 cup buttermilk
- 1 tsp vanilla
- 1 tsp baking soda
- pinch of salt
- 1 TBS unsweetened cocoa
- 1 tsp white vinegar
- 1 1oz bottle red food coloring ( I use less and to color I like)
- 1/3 package of instant chocolate pudding (I used Jello brand Simply Good Chocolate with no artificial flavors, dyes or preservatives. It comes in a pouch rather than a box. Or you can use 1/3 box Jello instant pudding mix).
Instructions
- Mix all ingredients at once until smooth. Grease and flour baking pans (one 9 x13″ or 2 9″ round pans)
- Bake at 350 for approximately 30 min.
- Cupcakes 16-17 min until toothpick comes out clean.
