Red Velvet Cake

Red Velvet Cake

Ingredients
  • 2.5 cups cake flour
  • 1.5 cup sugar
  • 1.5 cup vegetable oil
  • 2 eggs
  • 1 cup buttermilk
  • 1 tsp vanilla
  • 1 tsp baking soda
  • pinch of salt
  • 1 TBS unsweetened cocoa
  • 1 tsp white vinegar
  • 1 1oz bottle red food coloring ( I use less and to color I like)
  • 1/3 package of instant chocolate pudding (I used Jello brand Simply Good Chocolate with no artificial flavors, dyes or preservatives. It comes in a pouch rather than a box. Or you can use 1/3 box Jello instant pudding mix).
Instructions
  1. Mix all ingredients at once until smooth. Grease and flour baking pans (one 9 x13″ or 2 9″ round pans)
  2. Bake at 350 for approximately 30 min.
  3. Cupcakes 16-17 min until toothpick comes out clean.
