Black Bean Soup

2 cans (15.5 oz.) Black Beans, undrained

½ cup chopped onions

1 clove garlic, minced

½ tablespoon olive oil

1 cup water

1 chicken bouillon cube (I use No Sodium Chicken Broth)

½ cup cooked diced smoked ham (optional)

 

Sauté onion and garlic in oil in 3-quart heavy saucepan.  Puree or mash contents of 1 can of black beans and add to sautéed ingredients.  Add the remaining can of black beans, water, bouillon and ham.  Bring to a boil, reduce heat and simmer for 30 minutes.  A dollop of sour cream on top is a nice addition, with a tsp of shredded cheddar.

 

Serves 4-6
